4 ½ cups rolled oats<br />
1 cup whole wheat flour<br />
1 tsp. baking soda<br />
1/3 cup packed brown sugar<br />
2/3 cup butter, softened<br />
½ cup honey<br />
1 tsp. vanilla extract<br />
1/3 cup chocolate chips<br />
1/3 cup raisins<br />
<br />
Preheat oven to 325 degrees. Lightly grease a 9x13-inch baking dish.<br />

In a large bowl, combine the oats, flour, baking soda, brown sugar, butter, honey, and vanilla. Stir in the chocolate chips and raisins.<br />

Lightly press into prepared pan. Bake at 325 for 18-22 minutes or until lightly golden brown. Also, the youngest child of the Young's, Katie-11 months old, was born with a rare heart condition. About 25% of children have this condition heal before they turn 1 year old. This morning Katie went in for a very dangerous test to see if she has been healed. I made this yesterday morning and we all LOVED it! It kind of has an apple fritter taste to it. It is so easy to make too. Everyone have a wonderful Christmas....and enjoy the recipe!<br />

<blockquote><div style="text-align: center;"><span style="font-size: large;"><b>Apple Oven Pancake</b></span><br />
</div><br />
½ cup butter<br />
5-6 apples, peeled and thinly sliced<br />
brown sugar<br />
<br />
2 cups milk<br />
1 cup whole wheat flour<br />
1 tablespoon sugar<br />
4 eggs<br />
<br />
Turn oven to 400 degrees. Put ½ cup butter in a 9x13-inch baking dish and place in heating oven until butter melts. <br />
<br />
While butter melts, peel and slice 5-6 apples.<br />
<br />
Once butter is melted, remove dish from oven and spread apple slices on bottom of dish. Sprinkle with some brown sugar.<br />
<br />
In a medium-sized bowl, mix the milk, flour, sugar and eggs with a whisk. Pour mixture over apples in dish.<br />
<br />
The oven should be preheated now. Bake at 400 degrees for 20-30 minutes or until pancake mixture is set.<br />
<br />
<br />
Serve "as is"...no syrup needed!<br />

These books are excellent, but are very suspenseful and graphic at times (yet very realistic as to what was going on during that time). I highly recommend these books, but if you have a child who is sensitive to scary things, you may want to preview it before reading. <br />

The kids and I are enjoying it so much! This book takes you through 40 stories from the Bible, telling about the battle going on between God and Satan...and how God's continues to have victory over each and every battle that has taken place.<br />

I don't know about you, but I needed to be reminded that God is in control. In a time when our world seems to be spinning out of control, corruption and sin seems to be everywhere -- I needed to be reminded that we are in a battle....God is our Commander-in-Chief...and we are going to win! Praise Him!<br />

My kids can't wait to sit and read the 4 or so chapters that we read each day. Even my 6 year old is so excited when it is reading time. I can't recommend this book enough. I think this is one that I will pull out every year to re-read with the kids, it is that good.<br />

<span class="PostText"><span class="Body"></span><span class="Title">The next thing we did was read about a couple missionaries:</span><span class="Body"> Hudson Taylor and Amy Carmichael. After we read about Amy Carmichael, we played a little game. We rounded up a bunch of babies and Sarah hid them. Then the rest of the kids had to quietly come out and "rescue" these babies and take them back to their house (the playroom closet)...just like Amy Carmichael rescued baby girls from the temples in India.</span></span><br />

<span class="PostText"><span class="Title">After bingo and a few other table games,</span><span class="Body"> the kids colored in their Fall Party Coloring Book that I made for them. (I just printed out about 10 fall coloring pages from the internet; created a nice cover with a pumpkin graphic, their name, and "Fall Party Coloring Book" on the front; printed the cover on white cardstock paper; then put a blank white piece of cardstock on the back, the coloring pages in the middle, then stapled three times down the left side to make their own coloring book.) I fixed lunch while they colored.</span></span><br />

<span class="PostText"><span class="Body"></span><span class="Title">When lunch was ready, </span><span class="Body">the kids enjoyed a "picnic lunch" on the living room floor (eating lunch on a blanket) and watched a Little House movie. It was a fun morning with the kids!</span></span><br />

<span class="PostText"><span class="Title">fter the kids' nap, we went over to the church for their Family Fun Night.</span><span class="Body"> They had some huge inflatables for the kids to play on. Jonathan, Rachel, and Wesley enjoyed this slide. They climbed in, then slid down, I don't know how many times! <br />
<br />
I have to share something kind of scary that happened though...after they had been playing on it for a while, all of a sudden the thing started losing air and deflating. Rachel and Wesley were inside, along with a couple other kids. I was thinking..I need to get them out before the whole thing comes down on top of them and they can't get out! Sarah was able to reach Wesley and pull him out, and I reached Rachel and pulled her out. The other kids got out as well. It really wasn't that traumatic, but it was for Rachel. She started crying. She calmed down once she was out. <br />
<br />
What happened was that a couple guys were getting a popcorn machine going and I guess it flipped the breaker. They quickly got it flipped back and the big slide thing inflated again for the kids to play in. Rachel, however, was done. We couldn't get her to go back inside...I don't blame her!</span></span><br />

We came home, ate dinner, then played a game of "Hide the Pumpkins". Robert hid 60 candy pumpkins in our living room and dining room, and the kids had to come and find them all. They had a lot of fun.</span></span><br />
